Ohio's Canal Country Wineries (Images of Modern America)

by Claudia J. Taller

In the early 18th century, pioneers cleared land in Ohio's Western Reserve and found it suitable for farming, but until the Ohio-Erie Canal opened, it was difficult for them to share the fruit of their labor. Ohio's Canal Country Wineries captures the spirit of those who lived off the land from Cleveland to New Philadelphia along the Cuyahoga River and down to the Muskingum River--the path that the Ohio-Erie Canal took when it was built in 1832. As canal country began opening up, wineries along the Ohio River and the shores and islands of Lake Erie produced so much wine that Ohio became known as "Vinland." Now, the rich and fertile farmland along the canal has also been cultivated with vineyards, and the region is home to close to 50 wineries.

Oilseed Meal as a Sustainable Contributor to Plant-Based Protein: Paving the Way Towards Circular Economy and Nutritional Security

by Manoj Kumar Sneh Punia Bangar Parmjit S. Panesar

Protein is one of the most important ingredients of the human diet and is considered crucial for the growth development of all age groups. Studies have set the recommended dietary allowance of protein as 0.8 g/kg body weight per day for healthy adults. The world population is projected to reach 10 billion by 2050 and it will be a significant challenge for the scientific community to overcome the growing demand for protein. The results of global warming, from shifting climactic conditions to unpredictable rainfalls, have further complicated the situation. The search for alternative protein sources that can be both sustainable and renewable is one of the major challenges in the face of potential mass protein malnutrition. Oilseed crops such as soybean, mustard, oil palm, peanuts, cottonseed, flax seed, coconut, canola and sesame are mainly cultivated for the extraction of cooking oil and are underutilized as sources of protein. Oilseed meals contain as much as 50% protein but remain under-valued since they are traditionally utilized as fertilizer or as feed for livestock animals. Numerous recent studies show that oilseed meal sources can be utilized as a sustainable and renewable source of protein and could play a major role in alleviating the global problem of protein malnutrition. Oilseed Meal as Sustainable Contributor to Plant-Based Protein explores oilseed crops that can contribute towards the regular supply of protein in an increasing population and changing climate. Each chapter focuses on a specific oilseed crop including comprehensive coverage of the processing and extraction specifics for each crop plus their amino acid profiles and other functional properties. The application of oilseed proteins for production of bioactive peptides and preparation of value-added products is also covered. This text is useful for food scientists and researchers seeking an updated single source for coverage on all the most important oilseed crops andtheir potential roles in combating protein shortages in a growing world population.

Oklahoma Beer: A Handcrafted History (American Palate)

by Brian Welzbacher

Notoriously known as a "flyover state" in regards to alcohol, Oklahoma has a unique brewing history. Entering the Union as a dry state, Oklahoma struggled with bootleggers and the choc beer brewers of Indian Territory. Prohibition wasn't fully repealed in Oklahoma until 1959, when liquor sales were permitted, but a few pioneers navigated a web of restrictions to produce quality local beers. Brewpubs opened a new chapter in 1992 as a generation thirsty for handcrafted beers led to a resurgence in the industry. Author and proprietor of BeerisOK.com Brian Welzbacher unravels the stories behind the passionate breweries that stood up to tyranny and paved a path from Dust Bowl to full glass.

The Old Fashioned: An Essential Guide to the Original Whiskey Cocktail

by Albert W.A. Schmid

With recipes and historical trivia included, “this spirited guide is as bracing as that classic combination of rye whiskey, sugar, bitters and orange zest” (Tucson Citizen).American tavern owners caused a sensation in the late eighteenth century when they mixed sugar, water, bitters, and whiskey and served the drink with rooster feather stirrers. The modern version of this “original cocktail,” widely known as the Old Fashioned, is a standard in any bartender’s repertoire and holds the distinction of being the only mixed drink ever to rival the Martini in popularity. In The Old Fashioned, Gourmand Award-winning author Albert W. A. Schmid profiles the many people and places that have contributed to the drink’s legend since its origin. This satisfying book explores the history of the Old Fashioned through its ingredients and accessories—a rocks glass, rye whiskey or bourbon, sugar, bitters, and orange zest to garnish—and details the cocktail’s surprising influence on the Waldorf-Astoria Hotel and the Broadway musical scene, as well as its curious connection to the SAT college entrance exam. Schmid also considers the impact of various bourbons on the taste of the drink and reviews the timeless debate about whether to muddle. This entertaining and refreshing read, featuring a handpicked selection of recipes along with delicious details about the particularities that arose with each new variation, is perfect for anyone with a passion for mixology or bourbon.

The Old-Fashioned

by Robert Simonson Daniel Krieger

A complete history of one of the world's most iconic cocktails--now the poster child of the modern cocktail revival--with fifty recipes for classic variations as well as contemporary updates. No single cocktail is as iconic, as beloved, or as discussed and fought-over as the Old-Fashioned. But how you combine those ingredients--in what proportion, using which brands, and with what kind of garnish--is the subject of much impassioned debate. The Old-Fashioned is the spirited, delightfully unexpected story of this renowned and essential drink: its birth as the ur-cocktail in the nineteenth century, darker days in the throes of Prohibition, re-ascension in the 1950s and 1960s (as portrayed and re-popularized by Don Draper on Mad Men), and renaissance as the star of the contemporary craft cocktail movement. Also featured are more than forty cocktail recipes, including classic variations, regional twists, and contemporary updates from top bartenders around the country. All are accessible, delicious, and elegant in their simplicity, demonstrating the versatility and timelessness of the Old-Fashioned formula.
