FSMA and Food Safety Systems: Understanding and Implementing the Rules
by Jeffrey T. BarachThe US government's Food Safety Modernization Act (FSMA) of 2011 is an evolutionary "systems approach" to food safety that was derived from two major initiatives. One, the principles of HACCP (Hazard Analysis Critical Control Point) has been an industry- and then a regulatory- adopted approach to food safety since the 1990s. It has proven sound and been adopted by the international community. The interest in using HACCP principles as the basis for FSMA is a logical outcome of the proven successes of HACCP adoption. Second, the recalls and disruptions in the safety of the food supply in the past 15 years has prompted the FDA to consider modernizing the scope of FDA-regulated food safety systems. Incidents such as melamine in pet foods and Salmonella in peanut butter, plus many incidents of pathogens in fruits and vegetables, especially from foreign sources, has driven the need for an expanded scope and "modernization" of the system to prevent and control food hazards. FSMA is HACCP plus much more. It will take many years for the successful adoption and implementation of FSMA, so it is likely that we will still be using aids like this book to help the industry with compliance in more than five years. The book will enable industry to gain an understanding of the basics needed to comply with these new regulations. Emphasis will be placed on the shift in the FDA's role where, due to limited Agency resources and the scope of their international and domestic inspection duties, more reliance on electronic data and records will be expected of food companies. This shift to records inspection promotes a more efficient FDA in ensuring compliance as well as managing recalls. FSMA is setting and matching the world agenda for food safety, like GFSI Standards. Other countries, such as Canada, are moving their programs in this same direction. The production of safe food is essential for a food company to survive. Following the regulations is a requirement for both commercial and business success. The new FDA rules are technically complex and this book is necessary to assist food companies and others in understanding and implementing the new rules. New food safety rules will soon be published by the FDA. This manual will help food companies to understand and implement them successfully. Food companies employ a food safety individual who is responsible for managing production regulations imposed by Federal Agencies. That individual is responsible for understanding and implementation of food safety rules. He/she must also train on-the-line workers about food safety. There are many components to the new FSMA regulations and these will be overwhelming to the staff of many small and mid-sized food companies. Those in charge of food safety will first, need to understand FSMA themselves and second, be able to implement the new approaches in their facilities. Readers of this book will be made aware of the various components of this complex system and through the book gain an awareness, in simple language, of what is needed to comply out of 1000s of pages of complex regulations. Basically this book breaks down a complex set of regulations into simple language and steps to enable the reader to grasp the concepts and put them in place. FTIR Microspectroscopy: Selected Emerging Applications
by Noureddine AbidiFourier Transform Infrared microspectroscopy (FTIR) was first developed by William Coblentz in 1905 for analytical purposes. It has been established as a powerful analytical method to analyze a wide range of materials. The most convenient way to analyze the molecular structure was to prepare KBr pellets with small amount of chemical species. Currently, the development of the Universal Attenuated Total Reflectance (UATR) allows the use of ZnSe-Diamond crystal to acquire FTIR spectra directly from the sample with no special preparation. These traditional FTIR analyses have been made with devices capable of performing single measurements, thus, providing a single IR spectrum of the sample. Recent major technological development in FTIR instrumentation was development of microscopes and imaging systems. These devices are now capable of imaging larger sample area, providing not only spectroscopic information but also spatial distributional information. In addition, the development of Focal Point Array (FPA) has made FTIR imaging an emerging area of chemical imaging research. The aim of this book is to summarize in a single document the research work that is being performed using UATR and IR imaging in selected emerging applications in plant materials and biological samples.
